Fermenting a brew of a different kind in KC's Northtown

North Kansas City, MO - There's a brewery in Northtown doing things a little differently... as it brews up different flavors of kombucha.

Kombucha is a fermented, fizzy sweetened black or green tea drink that's become popular in the US in recent years due to its purported health benefits. 

Co-owner Amy Goldman says they opened the business after not being allowed to sell home-brewed beer at a farmer's market. The idea took off. 

Goldman says they've grown from a brewing up kombucha at home to now shipping their product to five states.

As it's a fermented drink, there is alcohol in it. But not much. And depending on who's brewing and how they're doing it, alcohol levels will vary.

The drink is believed to have originated in Manchuria hundreds, perhaps thousands of years ago, and consumed in China and far eastern Russia, before coming to Europe and eventually making its way to the US.

And now The Brewkery is brewing up its own version of kombucha here in the Kansas City Metro.

Their taproom has been open for a couple of months in Northtown, offering several flavors of the interesting brew.
